Creamy Basil Pesto
4 medium garlic cloves 2 ½ cups fresh basil, stems and buds discarded 1 oz Parmesan cheese, grated (about 1/2 cup) ¼ cup ricotta cheese 1 shallot, minced (about 2 tablespoons) 2 tablespoons extra-virgin olive oil
¼ cup vegetable broth
Salt and ground black pepper to taste
Process in blender or food processor and pour over about 1lb of penne pasta. So easy and simply delicious. Enjoy!
